A classic recipe for the best homemade lasagna! This mini lasagna recipe uses just 2 lasagna noodles and is layered with meat, cheeses, & sauce.

Instructions

Preheat oven to 350F

Step 1
Cook lasagna noodles (according to package directions). Drain & set aside.
Step 2
Heat oil in med. skillet over med. Add onions & cook (2 min.), stirring occasionally. Add minced garlic & cook, stirring occasionally (1 min. more.). Add ground beef & sprinkle Italian seasoning, salt, & pepper. Cook & stir until meat is no longer pink. Stir in 1/2 cup of tomato sauce, reduce heat to low & simmer (3 min.)
Step 3
Meanwhile, in sm. bowl, stir ricotta & 2T of Parmesan cheese together; set aside.

Assembly

In sm. (about 5”) greased baking dish, spread 2T. tomato sauce. Line cooked noodles on top. (If you are using unbroken lasagna noodles, they will drape over the sides of the baking dish.)
Step 5
Top the noodles with sauce, followed by Ricotta mixture, and 1/2 of the shredded Mozzarella. Fold noodles over meat mixture to cover.
Step 6
Top with the remaining sauce, Mozzarella cheese, & Parmesan cheese.
Step 7
Place the baking dish on a large baking sheet (to catch any spillage); place in oven & bake (30 min.) until cheese on top is melted.
Step 8
After lasagna has cooked, rest it on counter (15 min. ) before eating.

To keep it simple, you can use jarred tomato sauce or you can make your own.

The size of your baking dish will determine how many layers you are able to add.

You can also break the lasagna noodles in half to create a second layer for the lasagna.

EXTRA LAYER: Use a 8 1/2”x 4 1/2” loaf pan. In this type of dish, you will be able to add an additional layer.
