Tofu is sold in different textures, from silken to extra-firm, so it can be used in many types of cuisine. Extra-firm tofu is best when you are marinating and stir-frying because it will hold its shape and not fall apart.

Instructions

Step 1
1. To make the tofu: In a small bowl, mix together the lemon juice, garlic, ginger, and red pepper flake

2. Add the tofu and toss to coat.

3. Place the bowl in the refrigerator and marinate for 2 hours.

1. To make the stir-fry: In a large skillet over medium-high heat, heat the oil.
Step 5
2. Sauté the tofu for about 8 minutes or until it is lightly browned and heated through.
Step 6
3. Add the cauliflower and carrots and sauté for 5 minutes, stirring and tossing constantly.
Step 7
4. Add the red pepper and green beans; sauté for 3 additional minutes.
Step 8
5. Serve over the white rice.
