Instructions
Step 1
Get a large frying pan or wok over a high heat.
Step 2
Season the mini chicken fillets with salt and black pepper.
Step 3
Add the sesame oil to the pan, then tip in the chicken.

Leave to fry, stirring occasionally, while you thinly slice the red chilli.
Step 5
Back to the chicken.
Step 6
Add three-quarters of the chilli and the cashews.
Step 7
Fry, stirring occasionally, for 5 minutes, then add the sugar snap peas and noodles to the pan.
Step 8
Add the hoisin sauce and soy sauce and toss everything together to coat.
Step 9
Stir-fry for 1 final minute before piling into four bowls.
Step 10
Top with the remaining chilli to serve.
