Step 1
Slice squash into halves or quarters. Place it into boiling water. Boil for 6 to 8 minutes until tender. Drain well.
Step 2
Mix together egg, onion, mayonnaise, salt, pepper, sugar, and cheese. Fold squash into mixture.
Step 3
Stir crushed Ritz crackers into melted butter. Spread evenly over squash casserole. Bake in 350° oven for approximately 35 minutes. Serve.
