Instructions
Step 1
Heat oil in a pressure cooker over high heat Add halved onions and ginger, cut sides down. Cook without moving, reducing heat if smoking excessively, until onion and ginger are well charred (about 5 mins).
Step 2
Add garlic, cilantro, star anise, coriander, cinnamon stick, & cloves to the pot. Cool for ~2 min.
Step 3
Add water, fish sauce, sugar, & cilantro to the pot. Cook on high pressure for 15 min.
