Old El Paso Chicken Chorizo and Halloumi Wrap Folds

The Fajitas
Smoky BBQ Fajita Kit
2chicken breasts
large
200gchorizo style sausages
2bell peppers
1onion
½ tspsalt
300gHalloumi
300gRed Leicester
100gjalapeño slices
The Guacamole
Instructions
The Fajitas
Step 1
Slice each breast into 8 long strips of chicken
Step 2
Slice the onion and peppers into 1/4 inch king strips
Step 3
Slice the Halloumi into 8 pieces
Step 4
Slice each chorizo style sausage in half lengthways
Step 5
Sprinkle the salt over the chicken and veggies
Step 6
Heat 2 pans to a high heat and a third to medium heat
Step 7
Add the chicken and chorizo into one of the hot pans and fry for 3 minutes per side
Step 8
Add the onion and peppers to the other hot pan and flash fry for 4-5 minutes
Step 9
Add the Halloumi to the medium pan and fry for 2 minutes a side
Step 10
Sprinkle half the old El Paso spice mix over the chicken and chorizo and the other half over the onions and peppers

Slice the Red Leicester and split into 8
Step 12
Slice the wraps from the middle to the edge then lay the fillings as per the diagram

Fold each quarter from the closest left all the way round to the closest right, applying pressure each time
Step 14
Add each wrap fold to a pan on medium heat to toast for 2 minutes a side
The Guac

Finely dice the onion, chilli and coriander
Step 16
Halve, destone, and mash the avocado in a bowl with a fork
Step 17
Crush the garlic and juice the lime into the avocado, and add the diced onion, chilli and coriander and mix
Step 18
Add a bit of salt, taste test, and add more salt or lime juice to your personal taste preference
