Instructions

Step 1
1. Chop the tomatoes and cucumber into even-sized chunks and roughly chop the onion.
Step 2
2. Drain the chickpeas and add to a large mixing bowl. Add the chopped veg and season with salt. Set aside.
Step 3
3. In a small bowl, mix the urfa paste and oregano with the red wine vinegar. Add to the salad and toss together.
Step 4
4. Roughly chop the parsley and add to the bowl. Add the oil from the anchovies and plenty of extra virgin olive oil and give everything a good mix.
Step 5
5. Season to taste and pile onto a serving plate. Top with the whole anchovies.
Step 6
6. Get stuck in.
