Instructions

Step 1
Heavy cream + sugar + instant coffee in saucepan

Bring to simmer (on low heat until it gets hot)

Pour through fine mesh strainer into bowl, let cool 15min

Oven 325

Put ramekins in 9x13 pan

Whisk egg yolks with cinnamon

Mix in cream mixture until blended

Put mixture in ramekins
Step 9
Hot water halfway up the ramekins
Step 10
30-40min in oven, until slightly jiggly
Step 11
Refrigerate overnight
