Hot Beef Sandwiches with Sweet Potato Oven Wedges and Coleslaw

Hot beef sandwiches just sound like the world’s best comfort food, don’t they? In reality I’ve never had much success enticing anyone at my table into eating white bread soaked in gravy. The younger they are the harder it is to entice them. So I do this instead because I actually love hot beef sandwiches. Serve with a side of coleslaw and you’ve got an updated take on a diner classic.

Instructions

Step 1
Mix all of the salad ingredients together for the coleslaw and refrigerate up to 4 days
Step 2
Prepare the sweet potato and bake in the oven
Step 3
Preheat oven to 450F
Step 4
Line 2 baking pans with parchment paper
Step 5
Mix cornstarch and chili powder
Step 6
Toss wedges of sweet potato with oil, sprinkle with seasoned cornstarch and toss to coat.
Step 7
Spread seasoned wedges onto baking sheets, leaving space between wedges
Step 8
Bake for 10 minutes, turn wedges over and bake for 10-15 minutes more
Step 9
Remove from the oven and season with salt and pepper.
Step 10
While the potatoes are cooking heat olive oil in a large skillet

Saute onions until soft and beginning to brown
Step 12
Add gravy and enough beef stock to create a thin sauce.
Step 13
Add in sliced beef, reduce the heat to gently warm the beef through. Taste for seasoning and add salt & pepper if needed.
Step 14
Split the rolls, butter the insides. When the potatoes come out of the oven lower the heat to 350F and open face toast the rolls for a few minutes until warm and golden.
Step 15
Fill each roll with warm beef and onions. Add some mustard, cheese, pickles or pickled jalapenos if you like. Divide sauce left in the saute pan into 4 small bowls for dipping sandwiches.
Step 16
Stir coleslaw before serving.
