peeled and finely diced
3garlic cloves

medium, peeled and finely diced
1courgette
small, finely diced
1 x 400ggreen lentils
tin, drained
100gmushrooms

3 Tbsptomato puree
1 x 400gtin chopped tomatoes
1 x 500gpassata
1 Tbspdried oregano
1 Tbspdried basil
1red wine stock pot
1vegetable stock pot

240gwholemeal spaghetti
Instructions
Step 1
Spray a large frying pan with low-calorie cooking spray, place on a medium heat, add the onion, garlic, carrot and courgette and cook for 5 minutes until starting to soften.
Step 2
Add all of the other ingredients, stir, and simmer over a medium heat for 25 minutes, until the sauce has reduced slightly and the vegetables are soft.
Step 3
While the Bolognese is cooking, cook the spaghetti according to the packet instructions.
Step 4
Serve as soon as the pasta is cooked.
Step 5
Cool within 2 hours of cooking, then divide the bolognese sauce into individual servings (minus the spaghetti accompaniment) and freeze immediately.
