Instructions
Step 1
In a bowl, whisk 3 egg yolks and 2 egg whites with a generous handful of Parmesan (or cheese of choice) and some cracked black pepper - This would feed 3 people.
Step 2
Boil your pasta in salted water until al dente, do not allow it to get to well done, it will finish cooking in the sauce.
Step 3
Heat a frying pan over a high heat, add some olive oil and fry off your bacon until the fat burns off.
Step 4
Once your bacon is cooked, add 1/3 of a cup of the pasta water to the pan and turn the heat down to low/medium.
Step 5
Add your cooked pasta to the pan with the bacon and 1/2 a cup of pasta water and mix well. Take your pan off the heat.
Step 6
Pour the egg/parmesan/pepper mix into the pan and mix well, do not leave over the heat or the eggs will scramble. You can add another small amount of pasta water if is it too thick, but ensure it has cooled down. Add some more parmesan if it is too loose, or you can put it back over a VERY low heat.
Step 7
Serve with a sprinkle of parmesan and black pepper on top, and garlic bread on the side!
