Potato Candy

My grandmother made this candy for years. Who would think mashed potatoes would be used to make candy. But it was very popular during the depression era when food items for scarce. Dipped in dark chocolate it really is delicious and so easy to make.

Instructions

Step 1
Mix all ingredients together until well combined. Mixture will seem dry at first but as you mix it will become wet and doughy. Form into 2” balls and place on parchment lined cookie sheet. Freeze for one hour. Melt the chocolate for 90 seconds and dip each ball into chocolate until well coated and place back on parchment to harden.
