2 lbschicken breast
precooked and shredded, I used instant pot
20 ozfrozen cauliflower rice
or brown rice
1white onion
small, or yellow, diced
1red pepper
diced
½ cupfrozen peas and carrots
½ cupcanned coconut milk
½ cupbuffalo sauce
¼ cupranch dressing with avocado oil
1 Tbspminced garlic
1 tspsalt
½ tspblack pepper
Instructions
Step 1
1. cook chicken in instant pot and shred
Step 2
2. preheat oven to 400 degrees F
Step 3
3. add veggies and rice and shredded chicken to casserole dish
Step 4
4. in a small bowl combine spices, minced garlic, coconut milk, buffalo and ranch sauces
Step 5
5. whisk to combine
Step 6
6. pour into casserole dish and stir until well combined
Step 7
7. bake 45 mins (or slightly longer for crispier top)
Step 8
8. remove from oven and drizzle with buffalo and ranch sauces, Enjoy!
