These PF Chang's Chicken Lettuce Wraps are a super easy copycat of the restaurant version - and they are also a healthy, low carb dinner idea made with ground chicken, mushrooms and water chestnuts!

Ingredients
4 servings
1 Tbspsesame oil
1 poundshiitake mushrooms
or any mushrooms will work here, make sure they are finely chopped
1 lbground chicken
1yellow onion
diced
4cloves garlic
minced
1 Tbspginger
freshly minced, or 1 tsp dried
2 Tbsplow sodium soy sauce
use coconut aminos for whole 30 and tamari for gluten free
2 tspsriracha
optional
1 x 227mlcan water chestnuts
finely chopped
½ cupmatchstick carrots
4green onions
sliced
1 headromaine lettuce
or boston leaf
Instructions
Step 1
Heat the sesame oil in a large frying pan. Saute the mushrooms, then add ground chicken and salt.
Step 2
Add the rest of the ingredients including sauces (besides green onions and lettuce), cooking for 8-10 minutes.
Step 3
Remove the skillet from heat and stir in green onions.
Step 4
Add the chicken mixture to lettuce then serve and enjoy!
