Instructions
Arepas mixture
Step 1
To a large bowl, add the lukewarm water followed by 1tsp of salt and mix thoroughly. Once the salt has dissolved, add the corn flour and mix with your hands. Cover the bowl and let it rest for 10 minutes, allowing the flour to hydrate properly.
Fillings
Step 2
Open an avocado and slice it thinly. In a pan, with 1tsp of olive oil add your drained beans followed by garlic powder, cumin, salt, pepper and oregano. Cook for 3 minutes on medium heat then add a splash of water and start mashing the beans with a spatula to create your bean paste.
Cooking the arepas
Step 3
With your hands, form small balls with the flour-water mixture and flatten them on your palm. In a pan with 1tbsp of olive oil on medium-low heat, cook them 5 minutes on each side, or until starting to brown. Once cooked let them rest on a plate with a paper towel or a drying rack. Repeat this process adding more oil as it gets absorbed.

Once the arepas have cooled down, open them with a knife and fill with bean paste, cheese and avocado. Close and enjoy!
