Instructions
Step 1
In a bowl, clean beans and remove any rocks.
Step 2
Once cleaned, fill the bowl with enough water to cover the beans and let them soak overnight or a minimum of 4-6 hours.
Step 3
After soaking, rinse thoroughly.
Step 4
In your olla boil 24 ounces of water.
Step 5
Once warm, add the garlic, onion, and beans. Do NOT add salt until the end.
Step 6
Once at a boil, lower the temperature for a simmer. Check on the beans periodically and stir. Make sure water is always covering the beans. If you need to add more water, only add warm water.
Step 7
After an hour check the beans, if they are still hard cook for another 30 minutes. Make sure to stir occasionally.
Step 8
Cook until your beans are soft enough to enjoy but still firm enough to hold their shape.
Step 9
Add salt to taste.
Step 10
If you make a large batch you can freeze the remaining beans for up to 2 months.
