Instructions
Step 1
Heat oil and add the ginger, garlic and onion to the pan. Fry for three minutes.
Step 2
Add chickpeas and mushrooms and cook for 5 minutes
Step 3
Add the curry powder and sauté 1 minute
Step 4
Add the coconut milk, bell pepper, salt and pepper and cook for 5 minutes
Step 5
Add spinach and cook for a minute, serve with naan, rice or both
