Instructions

Step 1
In a jug, mix together the lukewarm milk, caster sugar and yeast.
Step 2
Stir well and then set aside until it becomes frothy – this takes approximately 20 minutes.
Step 3
In a large bowl, sift together the flour and salt. Add the butter and rub it into the dry ingredients to form a crumb-like consistency with no large lumps of butter. Make a well in the centre of the dry ingredients and pour in the milk and yeast. Using a spoon, bring the mixture together to form a dough.
Step 4
Turn the dough out onto a lightly floured surface and knead well until soft and smooth. Place the dough back into a large, lightly floured mixing bowl. Cover the bowl with cling film and leave in a warm place to allow the dough to rise for approximately 40 minutes or until doubled in size.
Step 5
Once the dough has risen, knock it back in the bowl and turn it out onto a lightly floured surface.
Step 6
Knead it gently to get the dough smooth, then roll out into a rough rectangle, about 5cm (2/3in) thick.
Step 7
Gently spread the soft butter evenly over the dough.
Step 8
In a small bowl, mix the dark brown sugar and ground cinnamon together.
Step 9
Sprinkle the cinnamon sugar evenly over the dough.
Step 10
Roll the dough up lengthways like a Swiss roll.
Step 11
Using a sharp knife, cut the roll into 16-18 slices.
Step 12
Line the cake tin with baking parchment.
Step 13
Very gently place the slices, flattest side down into the tin, arranging them snugly.
Step 14
Wrap the tin in cling film and allow the dough to rise again for approximately 20 minutes.
Step 15
While the dough is rising, the glaze can be made.
Step 16
Put the butter in a freestanding electric mixer with a paddle attachment or use a hand- held electric whisk to gradually beat in the icing sugar until there are no lumps of butter.
Step 17
Add a little of the cream cheese to loosen the mixture and beat until smooth, then add the rest of the cream cheese and mix on a slow speed until incorporated.
Step 18
Turn the speed to high and beat the topping until it is light and fluffy.
Step 19
Set aside to use later.

Preheat the oven to 180°C (350°F), Gas mark
Step 21
Gently brush the tops of the risen dough buns with beaten egg.
Step 22
Bake for approximately 10-15 minutes, or until golden brown.
Step 23
Allow to cool slightly and then top with the cream cheese glaze.
Step 24
Allow this to melt on top of the cinnamon buns.
