Poached chicken satay salad💚
Satay sauce:
3 heaped tablespoons of crunchy peanut butter
1/4 cup soy sauce
1/3 cup sweet chilli sauce
1/4 cup water
4 tablespoons rice wine vinegar
1 tablespoon sesame oil
2 garlic cloves - grated
1 tablespoon ginger - grated
Pinch of salt
2 small chicken breasts
Carrot - cut into sticks
Cucumber - cut into sticks
Red capsicum - cut into sticks
Spinach
Mungbeans
Mint
Coriander
Salted peanuts - roughly chopped
Black sesame seeds
Lemon
Bring a pot of water to the boil. Add the chicken breast and cook for about 12 minutes then turn off the heat and place the lid on top and leave for a further 5 minutes or until the chicken is cooked through and succulent.
It can take longer or less time depending on the size of the breast.
Remove chicken from water and using a sharp knife. Shred the chicken then set aside.
Grab a large bowl and add the satay ingredients. Whisk until well combined.
Let’s assemble! Grab a bowl and add spinach, cucumber, carrot and capsicum. Top with poached chicken, satay sauce, crushed peanuts, coriander, mint, mungbeans, sesame seeds and a good squeeze of lemon.
