Ingredients
6 servings
2 ccauliflower
frozen or fresh, chopped, optional but recommended
1 Tbspavocado oil
or olive
1white onion
chopped
4 clovesgarlic
minced
4yellow potatoes
medium, cubed
3 Tbspnutritional yeast
1 tsppaprika
2 tspdried dill
2 tspseafood seasoning
optional but recommended
1 tspsalt
1 tsppepper
3 ½ cvegetable broth
1 headbroccoli
chopped
2 cfrozen corn
or fresh
½ cnon dairy milk
Instructions
Step 1
After prepping and chopping all the ingredients but before cooking the rest of the soup, begin steam or boil the cauliflower if adding to the soup. You want it to be pretty soft (to blend) but also want to retain the nutrients so continuously check on it until it is fork tender then set aside
Step 2
While cauliflower is steaming, heat the oil in a large pot and cook the onion and garlic over medium heat until onion is translucent
Step 3
Add the potatoes and all your herbs & seasonings let cook for about 3 minutes then add the veggie broth and bring to a boil. Cook for about 10 minutes or until the potatoes are almost, but not completely fork tender.
Step 4
Add the broccoli, corn (and any other veg you're adding) now. Continue to boil until both broccoli and potatoes are fork tender, another 5-8 minutes, depending on the size of broccoli.
Step 5
Now if using the steamed cauliflower, add it to a blender with the milk & about 1/3 c. of cooked potatoes from soup and blend well. Adding potatoes here is optional but makes the soup extra creamy.
Step 6
Add the blended mixture to the soup and mix well.
Step 7
Allow soup to cool a bit then enjoy! (PS. I also love to add a small pat of vegan butter to the soup when serving it! It adds even more flavor and some fat)
