Instructions

Step 1
partially cook sweet potatoes in the microwave for 4 minutes, peel the skin off and chop.
Step 2
dice onion, red peppers, and garlic.
Step 3
add onions to hot pan with olive oil and cook down.
Step 4
add peppers and garlic to sauce pan and cook til softened.
Step 5
add sweet potato and drained black beans.
Step 6
add lime juice and spices.
Step 7
add to a tortilla with your favorite taco toppings!
