Instructions

Step 1
Chop two to three medium Goldie potatoes let the potatoes simmer on the skillet on medium heat for about ten minutes. Optional you can add two tablespoons of EVOO. Add a pinch of salt, pepper and coriander seasoning.. Next add the chopped bell pepper and let simmer for five minutes. You can lower the cook temp on the oven to three or low as to not over cook the peppers. Next whisk about 4 eggs add bacon bits keep whisking so the ingredients are blended together. Go ahead and add the eggs and bacon in the skillet. Make sure eggs are cooked through and add cheese to melt on top. Now it’s ready to serve! Add your veggie toppings can really be anything you enjoy! For my morning hash! I added a sliced avocado, cherry tomatoes. Sliced cucumbers and drizzled a little mild sauce for a kick!
