Instructions

Step 1
Fry the onions until crispy and set aside. Use the balance oil to scramble 2 eggs and set aside.

Put 2 tbsp onion oil in wok, add long beans, carrot, sweet corns, char siew and rice.

Step 3
Turn heat to medium. Add oyster sauce, light soy sauce (optional), sesame oil and pepper. Mix well.

Step 4
Push the rice aside, add 1 tbsp of oil and 1 egg. Cover the egg with rice. On high heat and mix well. Taste and adjust seasoning accordingly.
