Ingredients
4 servings
4green bell peppers
large, or yellow
½ cupbrown rice
uncooked
¼ cuponions
minced
¼ cupblack olives
sliced
2 teaspoonssoy sauce
1garlic clove
minced
1 x 28 ozcan low sodium whole tomatoes
1 x 6 ozcan low sodium tomato paste
1 x 15.25 ozcan corn beans
or kidney, drained
Instructions
Step 1
Cut tops off peppers and remove seeds. Reserve pepper tops. Place peppers upright in slow cooker
Step 2
In a bowl, mix the remaining ingredients. Stuff peppers, reserving remaining filling.
Step 3
Please pepper tops on peppers. Pour remaining filling over the stuffed peppers and press down in between the peppers.
Step 4
Cover and cook on low 6 to 8 hours, or until peppers are as tender as desired
