Ingredients

2 lbsboneless chuck roast
trimmed and cut into 1-2 inch pieces
1 ½ tspsalt
1 tspblack pepper
2 Tbspvegetable oil
12 ozdark stout beer
3 cupsbeef broth
3carrots
peeled and cut into 2 inch pieces
1.25 lbbaby Yukon gold potatoes
halved or quartered
1yellow onion
diced
5 clovesgarlic
minced
2 tspfresh sage
minced, optional
2 Tbspbeef base
optional?
2 Tbsptomato paste
1 Tbsphorseradish
1 Tbspbutter
softened
1 Tbspall purpose flour
Instructions
Step 1
Season beef with salt and pepper
Step 2
Heat vegetable oil in a large skillet over medium-high until shimmering
Step 3
Add beef in a single layer and brown on all sides
Step 4
Place beef in slow cooker
Step 5
Add in carrots, potatoes, onion, garlic, sage, beef base, and tomato paste
Step 6
Pour beer and broth into the hot pan and get the fond.
Step 7
Pour in beer/broth mixture from skillet
Step 8
Cover and cook on low for 7 to 71/2 hours
Step 9
Mix together butter and flour to form a ball
Step 10
Remove lid and add horseradish and butter/flour ball
Step 11
Cover and cook for an additonial 20-30 minutes
