Ingredients
6 servings

¼ cupghee
or other healthy cooking fat

1yellow onion
sliced

2cloves garlic
minced

1eggplant
cut into 1/2” pieces

0.5broccoli
roughly chopped

0.5cauliflower
roughly chopped

1green pepper
sliced

3tomatoes
roughly chopped

¼ cupwater
or vegetable stock

2zucchini
cut into 1/4” slices

¼ cupparsley
chopped

1 Tbsporegano
freshly chopped, or 1 tsp dried oregano

¼ teaspoonsalt

freshly ground pepper
to taste

1 ½ cupscrumbled feta cheese

½ cupextra virgin olive oil
Instructions
Step 1
In a large, heavy-based casserole dish greased with ghee (or other cooking fat), cook the onion over medium-high heat for 5-8 minutes until lightly browned.
Step 2
Add the garlic and eggplant, and cover with a lid. Lower the heat to medium-low and cook for 3-5 minutes.
Step 3
Add the broccoli and cauliflower, and cook, covered for 3-5 minutes.
Step 4
Add the pepper, tomatoes, and water. Mix and cover with a lid. Cook for another 5 minutes.
Step 5
Add the zucchini and stir to combine. Cook, covered, for 5-10 minutes, or until zucchini is tender
Step 6
Preheat the broiler.
Step 7
Mix in the parsley (leave half for garnish), oregano, salt, and pepper. Top with the feta cheese and then place under the broiler and cook o high for about 5 minutes, or until the feta is lightly browned. Leave to cook for 5 minutes.
Step 8
Garnish with more parsley and drizzle with the olive oil, and serve immediately. (Once cool, refrigerate for up to 5 days)
