Ingredients
5 servings
200gsweet potatoes
peeled and cut into 5 cm wedges
low calorie cooking spray
1 tspsmoked paprika
150gonion
diced
1 tspchilli powder
1 tspground cumin
1 tspground coriander
420gtin of baked beans
200gtin of kidney beans
drained
25gcheese
grated
25gspring onions
sliced diagonally
Instructions
Step 1
1. Preheat the oven to 200°c/180°c fan/gas mark 6. Place the sweet potato wedges on a baking tray and spray with fry light. Sprinkle with the smoked paprika and toast in the oven for about 25-30 minutes or until golden brown.
Step 2
2. Spray a large frying pan with fry light and fry the onion for 3-4 minutes until beginning to soften, add a little water if necessary. Stir in the spices and cook for a further minute.
Step 3
3. Add the baked beans and the kidney beans and heat gently. Divide the spiced beans between 5 pots. Add three sweet potato wedges to each pot. Sprinkle with grated cheese and spring onions.
