2. Spray a large non-stick pan with olive oil and lightly brown the meatballs (no need to cook all the way through). Set

3. For the spanakorizo, heat a deep pan (with a lid), over medium heat and spray with olive oil. Add onion, chilli and garlic

into the pot and cook for 2 to 3 minutes. Add spinach and cook for 2 minutes until wilted.

4. Add rice, tomato paste, beef stock, salt and pepper and stir to combine.
Step 6
5. Add the meatballs to the pan, cover and reduce heat to low. Simmer for 20 minutes, stirring halfway.
Step 7
6. Once the rice is cooked, you’re ready to serve!
