Ingredients

¼ cuplime juice
freshly squeezed

2 tsplime zest

3 Tbshoney

½ cupolive oil

¾ tspground cumin

0.75 lbbacon
thick cut

¼ cupbrown sugar

½ Tbscoarsely ground black pepper
i like halving with orange pepper seasoning

red pepper flakes

4chicken breasts

¼ cupolive oil
i added 1 tbs garlic olive oil

2 Tbswhite balsamic vinegar

2 Tbsdijon mustard

3 dashesliquid smoke

4hamburger buns

2 Tbsbutter
melted

2 Tbsmayo

½ Tbsolive oil

Instructions
Step 1
For the Dressing:
Place all ingredients except oil in a blender and blend until smooth.
Drizzle in the olive oil and blend until smooth.
Place in a jar with lid and store in the fridge for up to one week.
Step 2
For the Bacon:
Heat oven or grill to 400 degrees. Line a baking sheet with parchment paper. Place strips of bacon on sheet pan. In a small bowl, mix together brown sugar and pepper. Sprinkle 1/2 of mixture on bacon strips. Place baking sheet in oven or on grill and cook for 15 minutes. Turn bacon strips and sprinkle on remaining sugar mixture. Continue to cook for 10 minutes, watching carefully so that bacon does not burn.
Remove pan from oven or grill. Set aside and allow bacon to cool. Once bacon has become somewhat hard, remove from baking sheet and place on paper towels to drain any extra drippings. Cut strips in half.
Step 3
For the Chicken:
Mix all marinade ingredients in a large bowl. Add chicken and coat evenly. Grill chicken 7-9 minutes or until done.
Step 4
Assemble the Sandwiches:
Mix the melted butter, mayo, and olive oil. Spread butter mixture evenly on both sides of each bun. Toast the buns.
Place a handful of shredded lettuce on bottom bun.
Next, add the chicken. Top chicken with dressing.
Add 3 half strips of bacon on top of chicken.
Add top bun and enjoy.
