Instructions
Step 1
Preheat oven to 190 degrees. Line 2 large baking sheets with parchment paper.
Step 2
In a medium bowl, combine the dry ingredients except the sugar. Set aside.
Step 3
In a large bowl, cream together the butter and sugar. Once light and fluffy, add the egg and vanilla essence and whip until combined.
Step 4
Add the dry ingredients to the wet and mix with a spatula until the flour is absorbed. Do not over mix. Lastly add in the oat and raisins or chocolate chips. Using a tablespoon, scoop heaped tablespoons of the cookie dough onto the lined sheet, leaving 1 1/2 - 2 inches in between each.
Step 5
Bake for 12-13 minutes until golden brown and slightly risen. Do not over-bake.
