Instructions

Step 1
Slice chicken into 1/8 inch thick pieces
Step 2
Marinate with 1/2 tsp salt, 1/2 tbsp soy sauce, 1/2 tbsp oyster sauce, 1/2 tbsp Chinese cooking wine, 1/4 tsp baking soda, and a drizzle of sesame oil. Let it sit for 20 minutes.
Step 3
Slice mushrooms into 1/4 inch thick pieces. Prepare snow peas, julienne carrots and mince garlic.
Step 4
Heat wok until it is smoking hot. Add 2-3 tbsp cooking oil. Toss the oil around and wait for the oil to be smoking as well.
Step 5
Add the marinated chicken and cook. Sear the chicken and then flip. This should only take a couple of minutes.
Step 6
Cook carrot, garlic, mushroom and vegetables over medium heat until they are soft. It will take 2-3 minutes. Add 1 tbsp soy sauce, 1/2 tbsp oyster sauce. Mix well.
Step 7
Add the chicken back into wok and enjoy.
