Step 1
Bring a small pot of water to boil, with a bowl of ice water next to it. Blanch the mustard greens for about 30 seconds, or until deeply green, then dunk in ice water. Drain, chop into pieces, and set aside.
Step 2
Smash about 6-8 potatoes lightly by drizzling them with olive oil and pressing them with the palm of your hand into the cutting board. They should break into small patty-like shapes. Season with salt and pepper.
Step 3
Heat a pan on medium-high heat, and once hot, add in a little glug of oil. Roast the potatoes, using a spatula to press them into the pan, and flipping as they start picking up some color. It's ok to break up the potatoes a little bit, but keep them in larger chunks.
Step 4
Drop in the butter an toss to combine. Once the potatoes are nicely coated in butter and well-colored, add in the mustard greens, garlic, and shallot. Zest the lemon over the pan, then add the juice of the lemon, as well. Mix to combine and cook a little longer to roast the garlic and shallot, as well as wilt the greens a little more.
