Layered buttery roasted potatoes with a crispy top, with chives and Parmesan pictured but feel free to add whatever you like

Instructions
Step 1
Smash 5 cloves garlic and on low heat gently simmer in clarified butter for a few minutes until nicely fragrant
Step 2
Peel Yukon’s and slice as thin as you can 1/8 of an inch preferably. Dress potatoes with enough of your butter to coat and season with salt, pepper and chopped fresh thyme
Step 3
Layer potatoes in a muffin tray leaving a slight gap towards the top. Pour a 1/2 tbsp of the butter over the top and place into the oven at 375°f / 190°c for 25-30 minutes until it can be easily pierced with a knife and is crispy on top
Step 4
Let cool slightly before using a narrow spatula or dull table knife to remove from tray. Garnish with whatever toppings you like
