Instructions
Step 1
Seperate the egg yolks from egg whites.
Step 2
Beat the egg whites with a pinch of salt until fluffy & stiff peaks form.
Step 3
Line a baking sheet with parchment paper. Put the bread and spoon the egg whites on top of it. Create two mounds with dips in their centers.
Step 4
Preheat the oven to 230°C. Bake the whites for 6 minutes. After 6 minutes, gently add egg yolks to the center of each nest and bake for 3 more minutes.
Step 5
Serve with freshly chopped chives.
