Instructions

Step 1
1. Cut off radish tops, leaving 1/2 inch stems attached to radishes. Reserve tops. Quarter radishes lengthwise. Trim leaves from tops, and discard tops. Coarsely chopped radish leaves to equal 4 cups
Step 2
2. Heat olive oil in a large skillet over medium high heat. Add radish quarters and 1/4 teaspoon salt to pan, working in batches if needed to prevent overcrowding
Step 3
3. Cook radishes until lightly browned on cut sides, about four minutes. Set aside
Step 4
4. Combine avocado, buttermilk, chives and remaining 1/2 teaspoon salt in a mini food processor and blend until smooth, about one minute
Step 5
5. combine pea shoots and radish leaves. Place One Cup of greens mixture on each of eight salad plates. Top each with six radish quarters. Drizzle each servings with about 2 tablespoons avocado dressing
