Moroccan roasted veg with tahini dressing
Tahini is a smooth paste made from sesame seeds - you might recognise its nutty flavour from good houmous.

Instructions
Step 1
Heat oven to 200°C/180°C fan/gas
Step 2
Spread the vegetables out on a baking sheet.
Step 3
Drizzle over the oil and harissa, season and toss well.
Step 4
Roast for 30 minutes or until cooked and beginning to caramelise.
Step 5
Mix together the tahini, lemon juice, yogurt and 1-2 tablespoons water to make a dressing.
Step 6
Stir in half the mint.
Step 7
Sprinkle the veg with the remaining mint and serve with the dressing, plus some couscous and warm pitta bread, if you like.
