Recipe:
(3 jars, 25min prep time):
-400g firm tofu
Cut in cubes
-1 Tbsp oil
-2 Tbsp maple syrup
-1 Tsp harissa spice
-salt to taste
Mix and bake at 200C/400F for 20mins.
-180g Couscous (I used pearl couscous)
Cook for 10min in salted water.
-1/2 cucumber
-1 red pepper
-a handful sun dried tomatoes
Chop everything.
Dressing (add to each jar):
-1 Tbsp hummus
-1 Tsp lemon juice
-1 Tsp agave or maple syrup
-salt to taste
-1/2 Tsp paprika
Mix.
Add the veggies, then tofu, then couscous and optionally some cilantro on top.
Refrigerate until youβre hungry.π
