1 cancarrots
cooked
2 cupssplenda
1 cupbutter
2eggs

¾ cupsall purpose flour
3 tspbaking powder
1 ¾ cupsalmond flour
½ tspsalt
¾ cupcoconut
Orange Butter Frosting
Instructions
Step 1
Heat oven to 400°. Mix carrots in blender. Combine in mixing bowl with Splenda, butter and eggs. Stir in flours, baking powder and salt. Stir in coconut.

Step 2
Drop dough by medium scoop about 2 inches apart on ungreased cookie sheet. Bake until almost no indention remains when touched, about 14 minutes.
Step 3
Immediately remove from cookie sheet, cool. Frost with Orange Butter Frosting.
