Instructions
Step 1
Soak the lentils for at least two hours and drain the water
Step 2
Add the oil to a large pot and heat on medium heat. Add the onion and a little bit of salt and sauté until it is golden (about 10-15 minutes)


Step 3
Add the celery and garlic and stir and sauté for a couple seconds


Step 4
Add the turmeric, cumin, and pepper.
Stir and sauté for a couple seconds



Step 5
And the tomato paste and the lentils. Stir and then add boiling water and cilantro and stir.




Step 6
Bring to a boil, cover and cook on the lowest heat for 1.5 hours or until the lentils are very soft and breaking apart.
Step 7
Add the salt and cook for 5 more minutes. You can then blend the soup a bit if you would like.
