Ingredients

Butter
the amount used is optional, you can substitute for olive oil

2shallots

1onion
chopped

3 clovesgarlic
diced

4carrots
diced

3celery sticks
diced

3 cupsorange lentils

1 tablespoonsalt

1 tablespooncumin

1 tablespooncurry
mild

1 teaspoonturmeric

2 cartonsvegetable broth

Water
to fill pot

½ cuplemon juice

2 cupsspinach
Instructions
Step 1

In a large pot, sauté shallots, onions and garlic , with your choice of oil .


Step 2

Add the carrots and celery and sauté until slightly tender.
Step 3

In a colander, wash your lentils.
Step 4

Pour washed lentils in to the pot and sauté.
Step 5

Add the salt, cumin, turmeric, and curry.


Step 6

Pour in the vegetable broth .

Step 7

Add water to fill the rest of the pot leaving room to be able to mix the soup comfortably.
Step 8

Once it’s at a simmer add the lemon juice. Let the soup boil and mix occasionally.
Step 9

Once the lentils split, add the spinach.

Step 10

Keep an eye on the consistency and add liquid if needed. Enjoy!
