Reduce or increase chili powder according to how spicy you want it. Using a fresh chilli, finely chopped is an alternative. You can also put Tabasco sauce on the table for people to add if they want it spicier, or chopped fresh chilli to sprinkle in.
Fresh tomatoes are nicest, the original recipe said peel and de-seed them but I never bother. You can substitute chopped tomatoes from a can - strain out the juice. Either way keep the heat fairly high to boil off the liquid (stir often!) and don't cook for too long after adding the tomatoes, so they don't break down to more liquid.
You can use slices of avocado instead of guacamole. You can make your own tomato salsa if keen!

Step 1
Heat the oil in a medium saucepan, add the onion, fry on a medium heat for 2 mins, add the garlic & stir. Add the beef mince and stir until all browned.
Step 2
Add the chilli powder, paprika and cumin and cook, stirring, for 2 mins. Stir in the chopped tomatoes and cook for about 5 mins, stirring as needed. Add salt and pepper to taste. Remove from the heat.
Step 3
Prepare the shredded lettuce and grated cheese in bowls, and place on the table with the guacamole, creme fraiche and salsa.
Step 4
Heat the soft tortillas in the microwave. Give everyone a warm tortilla on their plate, and let them help themselves to all other ingredients, piled in a strip down the middle, with much arguing over what is the best order to add them! Fold the bottom up and the sides in. Eat with both hands and a competition to see who can keep their plate cleanest. :)
