Instructions

Step 1
• Preheat the oven to 200°C
Step 2
• Mix the ground spices together. Take 1/3 of this mixture, oil and coat the butternut squash. Place in roasting tin and cook in the oven for 15 minutes, until starting to soften.
Step 3
• In a pan, heat oil then add the onion and remainder of the spices. Gently cook for 5 minutes.
Step 4
• Add the chickpeas and dates, cook for a further 5 minutes.
Step 5
• Add the butternut squash. Add enough stock liquid to just cover. Gently simmer for 25 minutes.
Step 6
• Add the spinach. As soon as the spinach has wilted, turn off the heat. Leave for 10 minutes before serving with rice.
