Instructions

Step 1
Preheat oven to 350°F/180°C.
Step 2
Place turkey breast in an oven-safe pan and bake for about 20 minutes per pound (45 minutes per kilogram), basting with pan juices occasionally, until internal temperature reaches 165°F/75°C.
Step 3
Let rest 15 to 20 minutes, then dice.
Step 4
Meanwhile, cook bacon in a pan over medium heat until crisp.
Step 5
In a blender or food processor, combine avocado, yogurt, lemon juice, black pepper and water.
Step 6
Puree until smooth.
Step 7
Toss dressing with lettuce; top with crumbled bacon, turkey breast and tomatoes.
