Ingredients
4 servings
2boneless skinless chicken breasts
Large
⅔ cupitalian breadcrumbs
1 tspsmoked paprika
½ tspgarlic powder
salt
to taste
pepper
to taste
2 Tbspolive oil
1 headromaine lettuce
8 stripsbacon
3eggs
hardboiled
1cucumber
large
grape tomatoes
1avocado
cheese
shredded, optional
For the dressing
Instructions
Step 1
Place chicken breasts in a large bowl along with breadcrumbs, paprika, garlic powder, salt, pepper and olive oil
Step 2
Toss to mix and ensure chicken breasts are well coated
Step 3
Place chicken breasts in oven at 400˚ for 20 minutes or until cooked through - flipping halfway through
Step 4
While the chicken is in the oven, cook the bacon in a large skillet over medium heat
Step 5
Chop lettuce, hardboiled eggs, cucumber, grape tomatoes and avocado and place in a large serving bowl
Step 6
Chop the cooked chicken and bacon and add both to the serving bowl
Step 7
Top with shredded cheese if desired
Step 8
For the dressing, whisk all ingredients together in a bowl and pour over salad
