Instructions

Step 1
Heat a large skillet over medium-high heat.

Coat pan with EVOO.
Step 3
Add onion, garlic, jalapeño, and mushrooms; sauté 5 minutes, stirring occasionally.

Gradually add spinach; cook 1 to 2 minutes, stirring until wilted.
Step 5
Stir in lime juice, salt, and cumin.
Step 6
Add rice and beans; cook, stirring constantly, 1 minute or until thoroughly heated.
Step 7
Add cheese, stirring until melted.
Step 8
Warm tortillas according to package directions.
Step 9
Spoon about 2/3 cup mushroom mixture down center of each tortilla; roll up.
