Salad
2 CupsEdamame Beans
Unshelled & cooked
2 CupsCucumber
Finely diced and patted with paper towel to soak excess liquid
1 CupGreen Capsicum
Finely diced and patted with paper towel to soak excess liquid
3 TbspSpring Onion
Finely chopped
0.25 CupFresh Coriander
Finely chopped
3 TbspSesame Seeds
To Serve:
Instructions
Step 1
Prepare dressing by placing all ingredients into a jar, closing the lid and shaking until well combined.
Step 2
Prepare salad by placing all salad ingredients into a large bowl. Mix well and drain any excess liquid. Pour over dressing and mix until well combined.
Step 3
Spoon salad into a serving bowl and garnish with nori. Only garnish with nori when you are about to eat as the nori will go soggy when storing leftovers. Eat salad as is or serve with a side of crackers and nori. Enjoy!
