Citrus and Herb Chicken Skewers

1 tbsp crushed garlic ⁣

1.5 lbchicken breast⁣
thinly sliced

Simple Chopped Heirloom Tomato and Basil Salad

Instructions

Step 1
1. Preheat the oven to 450°F. Combine the herbs, garlic, and the remaining ingredients for the marinade in a bowl. Thinly slice the chicken breast then cut into long strips that are about 2 inches wide. Add to the marinade then let the chicken marinate for at least 1 hour, but preferably overnight.⁣
Step 2
2. Thread the chicken strips through the skewers then place on a foil lined baking tray. Bake for about 15 minutes then broil for about 3-5 minutes (baking and broiling times will vary depending on thickness of chicken so keep an eye out!). Serve with the optional Heirloom Tomato and Basil Salad, rice, veggies, or whatever you prefer! Enjoy!
