Ingredients
6 servings
1 tablespoonolive oil
1white onion
small, diced
2 teaspoonsminced garlic
2 cupsvegetable broth
1 x 14.5 ouncecan petite diced tomatoes
1 x 4 ouncescan diced green chilies
1 teaspoonchili powder
1 teaspooncumin
salt
to taste
pepper
to taste
2 x 14.5 ouncecans black beans
drained and rinsed
1juice of lime

Instructions
Step 1
Heat olive oil in a medium soup pot or saucepan.
Step 2
Add onion and saute until begins to soften, about 2-3 minutes. Add minced garlic and saute an additional minute.
Step 3
Stir in vegetable broth, petite diced tomatoes, green chilies, chili powder, cumin, salt, pepper, and black beans. Bring mixture to a boil. Then, reduce heat and simmer for 10-15 minutes.
Step 4
Remove from heat. Transfer half of soup to a blender or medium bowl. Using a blender or immersion blender, blend until pureed.
Step 5
Pour pureed soup back into pot. Add lime juice and stir.
Step 6
Serve immediately and garnish with cilantro, a lime wedge, and/or sour cream, if desired.
