8boneless chicken thighs

4 portionspasta

2shallots
diced

6garlic cloves
minced

butter

cherry tomatoes
sliced in half

2roasted red peppers
sliced

spinach

basil

300mldouble cream

50gparmesan
Spices for chicken
Instructions
Step 1
Add the spices to the chicken and mix together well. Put oil into a large saucepan and get the pan hot before placing the chicken in the pan
Step 2
Brown on each side before taking the chicken out and adding the shallots, garlic and a knob of butter
Step 3
Fry off for a minute or so before adding in the tomatoes and red peppers. Fry off for 8-10 minutes
Step 4
Add the spinach and basil. Fry off for another minute or so before adding the cream. Lower the temperature. Season well and let the sauce thicken up before adding the parmesan
