Ingredients
2 servings
1 headcurly green kale
chopped and massaged with some lemon, evoo & sea salt
1 cupquinoa
cooked
1 cuptomatoes
or bell pepper, chopped
⅓ cupred onion
thinly sliced
¼ cupsalted pistachios
1avocado
diced
Sun-dried Tomato Dressing
Instructions
Step 1
Add all dressing ingredients to a personal blender and blend until very smooth.
Step 2
To a large bowl add massaged kale, quinoa, tomato, red onion and pistachios.
Step 3
Add the dressing and mix!
Step 4
Top with avocado and enjoy!
